
There’s nothing like coxinha! This salty delicacy can be found anywhere, from birthday parties to street fairs and it is one of the dishes Brazilian miss the most every time they are out of the country (so you can be sure they will always try to find a Brazilian restaurant).
INGREDIENTS:
2 boneless chicken breasts
450g potatoes
2 tbsp olive oil
1 large onion
4 tbsp hot sauce
100g plain flour
2 eggs
100g panko breadcrumbs
vegetable oil, for deep-frying
½ a pack of parsley
DIRECTIONS:
Boil a pan of water with a bit of salt, add the chicken to it for 10 minutes. Remove it and put it aside for it to cool. In the same liquid boil the potatoes for about 15 to 20 minutes. Mash and season the potatoes after it cools down a bit. In a separate pan, heat the olive oil and add the onion to it. With a bit of butter in your hands, take the mash potatoes and make them into a ball like format, add the chicken to it and close the dough. Heat the vegetable oil in 190 to 200 degrees Celsius. As you make the dough pass it through the panko and eggs and fry it in the vegetable oil. Enjoy!
